Takamasa Mogi

Owner Chef – Leading Sushi Kyu

Chef Mogi has been the owner-chef of Cubé Mayfair since 2019 and oversees the operations of its sister restaurant, Sushi Kyu, which opened in 2024. With exceptional skill and years of rigorous training in sushi craftsmanship, he delivers authentic Japanese sushi crafted to perfection. 
In 2005, as sushi gained worldwide recognition, Chef Mogi moved to London to showcase his talents in a city that blends tradition with innovation. His expertise quickly earned him positions at prestigious establishments such as Nobu. 
Since becoming the head chef at Cubé Mayfair, Chef Mogi has been instrumental in its rapid growth, transforming it into one of London’s premier sushi destinations. His passion and talent have made Cubé a favourite among sushi enthusiasts. Now, as the head chef of Sushi Kyu, he is dedicated to nurturing its growth and ensuring it becomes a cherished establishment in Soho. 

Farkas Bence

Sushi Chef

With over 10 years of culinary experience, including six years specialising in omakase sushi, Bence plays a vital role at Sushi Kyu. His training includes a year and a half at Nobu and seven years at Cubé Mayfair, where he refined his skills in the delicate art of sushi-making. 
Bence’s philosophy is to create the perfect nigiri—one that not only delights guests but leaves a lasting impression. His approach involves forming the rice into a boat shape and elegantly placing the fish on top, resulting in sophisticated and refined sushi. 
Constantly learning from Chef Mogi and renowned sushi chefs from Hungary, Bence is passionate about improving his skills and developing Sushi Kyu into a beloved sushi destination for all.

Hok Man Lo

Originally from Hong Kong, Man brings 14 years of sushi craftsmanship, influenced by his belief that food is a means to connect people. His dedication to learning and attention to detail are evident in every piece of sushi he creates. 
Man honed his skills at prestigious establishments such as Sushi Shikon and Sushi Jun in Hong Kong, mastering Edomae sushi while blending global influences. At Sushi Kyu, he combines tradition and innovation to craft an authentic yet modern sushi experience. 
As part of Chef Mogi’s team, Man values teamwork and strives to offer a harmonious fusion of culture and craftsmanship, ensuring each piece reflects his passion and dedica
